Mexican Quinoa Bowl
Mexican Quinoa Bowl
Serves 2-4
Ingredients
2 cloves minced garlic
1 small onion diced
1 small capsicum diced
A handful of green beans - I used snow peas
1 cup cooked quinoa (I cook mine using 1 part quinoa & 2 parts water)
1 can black beans or red kidney beans
1 teaspoon chili powder
1 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1 teaspoon sea salt
Method
1. Combine quinoa and water in a medium sized saucepan. Bring to a boil then reduce heat and simmer for about 13 minutes, or until the quinoa has absorbed all of the water. After the quinoa has cooked, fluff with a fork and take off the heat. Alternatively cook in the microwave.
2. Add some oil in a large pan or wok on high heat. Saute onion, garlic, green beans and capsicum for about three minutes, until veggies are just tender.
3. Add in the cooked quinoa, the the black beans and the rest of the ingredients. Season to taste.
