Roasted Pesto Mushrooms and Quinoa Salad


Mushrooms are a great meat alternative. They are full of flavour and are sooo juicy! Serve with a green salad and some quinoa and you've got yourself a tasty and super fast meal!


Ingredients 

1 bag Mushrooms - Darker variety mushrooms work well, such as portobello
2 tablespoons Green Pesto - find recipe here or use a fresh pesto from the supermarket
1/2 lemon
4 tablespoons olive oil




Method

1. Preheat oven to 170C. Mix pesto, olive oil and the juice of half a lemon in a large bowl.


2. Toss mushrooms in the sauce, coat evenly. Arrange on baking tray.

3. Pop into the oven for about 10 mins till cooked.

4. Spread remaining sauce on cooked mushrooms. Serve with your fav salad.
