Chickpea 'Tuna' Salad



Chickpea 'Tuna' Salad

Ingredients
1 can of chickpeas
Half of a small red onion finely diced
3-4 tablespoons of mayonnaise of choice (veganaise works well)
Salt and pepper to taste


Method
1. Smash chickpeas with potato masher or in a food processor (this is much easier). Make sure to leave a few chunks in there.

2. Mix in the rest of your ingredients. Season to taste and that's it!

Serve with crackers, sand which bread or eat in its own. You can imagine there are so many more variations on this recipe. Shout out to @polyvegan and @hotforfood for the inspiration!

Favourite Summer Products


This summer I have discovered some new products that I am in love with! Some of them are old favourites that have become staples in my home.

All fab eco/skin/animal friendly reasons aside, many people don't realise that many of these products are found in local supermarkets and are quite affordable, especially when you nab them at special prices! You really have to think of the value or cost of your own health, wellbeing and of course the planet!

Home and Beauty Essentials Guide

As I have become more conscious of what I put into my body, I have also been more conscious of what comes into contact with my skin.

Ever since I was a young girl, I have had severe eczema. Steroid creams had always been my go to, even knowing that it wasn't natural and was thinning and fading my skin. Now my skin is better than ever, and I credit this to my diet and the products that come into contact with my skin.


The things I look for in home and beauty products are anything plant and mineral based with no nasty chemicals such as parabens and products using only natural fragrances such as essential oils. Of course for the ethical side, cruelty free - no animal testing and products that are biodegradable as well as packaging that is recyclable.


Around the same time that I went completely animal free, I went semi hippy and made all my own home and beauty products, it was amazing and so much cheaper! I made my own moisturiser, deodorant, perfume, toothpaste, cleaning products and even bronzer from cocoa. This was all possible on my school/work holidays. These days I find it easier to buy eco products from my local supermarket. Maybe one day I will be a stay at home mum, then I will aspire to do it again!

The following is what we have available at supermarkets in New Zealand and Australia. What I buy depends on what's on special at the time. I know it seems expensive, but can you put a price on your health and wellbeing? xx

Happiness❤️





I'm posting this shameless car selfie, as I am feeling confident and beautiful.☺️ 


It has been a year since I decided get myself out of a rut and turn my life around physically, mentally and emotionally. I have learnt that true happiness and well being is found within myself, not through anyone, anything, anywhere but myself. I have discovered my right to it.


I truly thank everyone in my life and my followers who are supporting me through this journey. My loved ones have truly blessed me with their unconditional love, support and friendship. And it is encouraging to know that my posts have inspired you, as I embark on my journey to becoming the 'real' me. 



Let us all be encouraged to find ourselves and embrace this journey called life. 




Remember it is not about the destination, but the journey.

21 Day Cleanse!


It's that time again... Detox/cleansing time! I believe in eating a whole food diet, having all treats in moderation, and regular cleanses to give my body a break.

Around the same time last year I decided to kick my bad habits to the curb by completely changing the way I ate. I didn't even know that becoming vegan/vegetarian was going to be an outcome.

I had always wanted to be meat free, but never really tried it whole heartedly. Not until I did a 10 day juice fast inspired by Fat, Sick and Nearly Dead , when I came off the fast I reset my palate and decided to give veganism a go. Along the way I watched life changing documentaries like Earthings, Food Inc and Forks over Knifes which solidified my choice to stop eating animal flesh.

It has been a year on, and I am 18 kilos (39 pounds) lighter, my skin and hair is healthier, and I am all round feeling greater than ever!! The best part about being meat free is that there is not much temptation (try ordering at Mc Donald's) and it is so easy to keep the weight off.

Now back to the cleanse, even though I am 18 kilos lighter, I still have about another 10 kilos to go until I am at a healthy weight for my build and height! To read more about my previous weight gain click here.

So naturally, I am going to challenge myself to base my diet around fruit, veggies, bean and nuts. Twenty one days free of: gluten, preservatives, refined sugar, dairy and meat of course!

Health Benefits of Drinking Lemon Water


Lemon water has become a new part of my daily routine. In the morning when I get to work usually I would opt for a cup of coffee! I've kicked that habit, and have replaced it with lemon water.

Method:
Squeeze the juice of 1/2 a lemon into warm water. Warm water works best, as cold water takes a while to absorb and hot water can kill some nutrients.

At first I was not a big fan of the taste, but you get used to it, and now I really enjoy it. I do this first thing in the morning when I am half asleep (yes at work), then by the time I'm finished, I'm ready for the day!

Eating Out Vegan!

Sometimes you really want a take a break from cooking and want to eat out. Here is a quick guide to help you when eating out as a vegan.

Now let me say if you are a strict vegan, it may be be hard to find many options, unless you actually visit vegan friendly restaurants. It is all about being prepared and doing your research beforehand (the internet is your friend). Eating out vegetarian on the other hand is so much more easier, as it is more common, however many restaurants will make up for no meat by replacing it with tons of dairy.

In October, last year I converted to veganism. Then came Christmas and we were a little stuck when it came to the social aspect. We have decided to have no dairy or eggs at home, but will have it on occasion if eating out and or traveling. Being vegetarian got a little out of hand (we bought a huge block of cheese and started eating pizza regularly), and this is why I am back on the wagon currently doing a 21 day vegan and gluten free challenge!

Now keep in mind, these are only ideas and if you are a strict vegan, it pays to ask if certain items contain egg, dairy or animal products. 

So with no further adieu here are some ideas for your next food adventure...


Asian cuisine is often safe, as traditionally we do not eat many cow's milk products, however you still need to watch the egg. Specify or check that they do not use: fish sauce, oyster sauce or shrimp paste.

Japanese
Vegetable sushi rolls (cucumber, avocado, tofu, etc.), inari, seaweed salad, miso soup (without bonito fish flakes), vegetable tempura (check egg), and edamame beans
.  


Tofu teriayaki from Kensan on Anzac Ave. 


Thai

Most vegetable and tofu stir fries, pad thai without egg and shrimp, vegetable pad thai, coconut curries, rice wraps, vegetable spring rolls and sticky rice with mango.


Delish stir fried veges with tofu from New Flavour Restaurant on Dominion Rd. They have vegan dumpings too!


Chinese
Stir fried vegetables, noodle dishes, fried tofu, some dumplings and dim sims, and vegetable soups (check soup stocks).


Indian
Now here comes the flip side, indians who are vegetarians mostly do not eat egg but they consume cow's milk! So watch out for ghee (clarified butter) and paneer (cheese).  

Poppadums, samosas, vegetable bhajis, vegetable or chickpea curries, dahl, byriani, rice and roti. Check whether they use ghee (clarified butter) in any of their dishes.


Italian
Antipasto such as olives, sun dried tomatoes and artichokes. Tomato and vegetable based risottos and pastas (with no egg), pizza with plenty of vegetables and no cheese, garlic breads and bruschettas.

Middle Eastern
Falafel kebabs, couscous, samosas, flat breads, hummus, dolmas, vegetarian moussaka (no cheese), tabbouleh salad. Specify no dairy or yogurt sauce.


The California Burrito Company, in Ellerslie. They have soy sour cream and soy cheese (all vegan!)


Mexican
Bean burritos, tacos, nachos, corn chips, salsa and most guacamoles. Specify no cheese, sour cream and beans cooked with meat.

Soy flat white from Charlie & George Cafe in Stonefieds.



Cafes and Other Restaurants
Soy coffees, hash browns, mushrooms, baked beans, breads and dips such as hummus, baba ghanoush and tapenade, bruschetta, pasta, baked potato, hot chips, stir fries.

Tofu burger from burger fuel! Hold the aioli! Yummo, they have lots more vegan options too.

Now if don't get it right and don't stress! You can't be 100% sure when you eat out. Don't be hard on yourself, at least you are trying :) :) :)

Vege Patch Update - Six Weeks Later

Why Vegan?

October 2013:

So if you know me personally you will probably be thinking why vegan? I have told a few friends, colleagues and family and I am getting the reactions I expected: "Vegan? There's no fun in that!" "What are you going to eat?" "You are going to fade away!" Where will you get your protein and iron?" 

Now, let me say that in order for me to make a decision like this, I did think it through. I explored the health benefits, the actual food I can eat and decisions I would have to make in social contexts. Iron can be found in leafy greens, citrus and beans. As for protein, one cup of lentils has about the same amount of protein as a piece of steak except without all of the fat and cholesterol!

Hmmm let me think... Do I want to live longer, stronger and healthier? Yes please. The assumptions of a vegan diet is hilarious, people think all I am going to eat is salad... Umm boring! I am asian there is no such thing as boring food in an Asian's kitchen hehe.

Why I am vegan



  • To be healthy physically and mentally
  • To cure my eczema
  • To support the rights of living, breathing, childbearing animals have the right to run free. I watched Earthlings and I will never look at the piece of meat the same way again.

Those are only some points, but they are the main reasons.


My Journey to Veganism

Almost two years ago I was in my prime, healthy, energetic, and overall happy. Sadly in June, last year my Grandpa, my Mum's Dad, was growing very ill. A few weeks later he passed away, and left a huge emptiness in my soul. Most of the pain I felt was my Mum's pain. To see the person who bathed you, fed you, and loves you unconditionally in such pain and grief was heartbreaking.

My Grandpa Paul, was a hardworking, loving, wise and well respected man.  He was a seaman who travelled all around the globe, he always made sure his family had the best things in life and was successful enough to be able to retire comfortably at the age of 40. I have been fortunate to have been gifted his wise philosophies in life, passed down from my mother and will be passed down to my children and future generations. I know I am still young but can fully credit my success to my Grandpa Paul and my Mother.

How does the loss of my Grandpa connect to my veganism you ask? Well, the two weeks of his funeral in the Philippines could have been one of the toughest times of my life. The pain, grief and reasons behind his death ate my soul, sadly Grandpa had not left a happy man. When I returned back to New Zealand, I felt empty, I was lost, damaged, and scarred. I did have the unconditional love and support of Jake and my family but this pain was too hard to bare. This is when I started eating, eating and eating more. I wanted to numb myself to try to forget the experience. I started to pull away from my friends, and ate at every opportunity I could find. The only things that would get me through the day was my beautiful partner, my class, and my family. They were constant reminders that I needed to go on, but the eating didn't stop.

During the one year anniversary of my Grandpa's passing, and twenty kilos later, I had finally made the decision to stop abusing myself and move on. It was very hard at the start, as a bad habit is not easy to get rid of. My eczema was in the worst condition that it had ever been, due to what I was putting in my mouth. I started by going on a Paleo diet which focusses on a 'caveman' style of eating: Meat, egg, fruit, veg and nuts - no grain or wheat allowed. I did this for about three months and saw no change in my skin and was not feeling 100%.

A few weeks later my uncle (dad's side) in the Philippines was diagnosed with a serious illness. My Dad being a proactive man wanted to do everything to find a natural cure, that did not involve medicine. He showed him the documentary 'Forks Over Knives' and my uncle was willing to give it a go. Forks over knifes explains the negative effects animal protein has on the body, with removing this protein from our diet it has been proven to cure many diseases.  Having said this, my Dad, his wife and my little brother took the pledge to eliminate meat from their diet in order promote a healthy lifestyle. At first I knew I should have been doing the same, but it took me a while.

Ten days ago, I decided to go on a juice detox to get rid of all of the toxins in my body and reboot my life. I had fresh fruit and vegetable juice five times a day with plenty of coconut water and lemon water in between. My juice detox helped me reflect and truly assess what was important, and it was then that I made the decision to go vegan and eliminate all dairy and meat products.

It is now day ten the last day of my juice fast and I am feeling, energetic, positive, motivated, mentally focussed, healthy and I have also lost 7 kgs! I am a happy woman, and am looking forward to my new life as a vegan. My life changing decision is dedicated to my partner, my mother, my family, my friends, and to my dear Grandpa Paulino Soliano xx

I hope you are inspired and can understand my decision, either way I don't mind, its my life, my body and I choose what I do with it.

Our Instant Restaurant - Spanish Night



Hi all, I am very excited tonight as we have turned our lounge into our 'Instant Restaurant'. To give you more background, some of us from our group of friends have decided to run our own version on My Kitchen Rules. If you have not seen this, its a reality show where teams get together and dine at others houses and turn their homes into 'Instant Restaurants'.

Jake and I have decided to go with a spanish theme since we are cray about spanish food at the moment!

Yum huh? Well guess what? We are going to post all of the recipes that we make that night woohoo! So I will be whipping out the camera for some great tutorials of Jake's culinary skills (and also mine hehe).

As you might have figured by now I (Kim) am the baker and Jake is the cook!

Will post more pics and recipes will be up soon!
