Croatian Kidney Bean Stew



This recipe is definitely worth trying out. My Stepdad shared with me his family recipe for this flavoursome soup/strew. I like to call it a stew as the taste reminds of meat stews I had pre-vegetarian, full bodied and rich depth if flavour.

The smoked paprika is essential to achieve this gorgeous flavour, we used pimenton which is a Spanish smoked paprika. The paprika is cooked in a flour roux with garlic, this helps to thicken and flavour the soup.

My Stepdad's mother, and grandmother and I'm guessing many generations have been making this for decades. I hope I have remembered the recipe right, my tummy thinks so :)

Croatian Kidney Bean Stew


Ingredients


500 g (17 oz) dry red kidney beans
1-2 l water
1 medium onion
2 medium carrots
1/4 of a red bell pepper
1 teaspoon salt
1 teaspoon vegeta
1/4 teaspoon fresh ground black pepper
Bay leaves
4 tablespoons tomato paste
2 tablespoons cooking oil
4 garlic cloves
2 tablespoons flour
1 tablespoon smoked paprika

Method


Preparing the dried beans:

Soaking the beans in cold water over night will reduce the cooking time. If you have pre-soaked the beans, rinse them, place in a large cooking pot and go to number 1.


If you didn’t soak the beans, place them in a cooking pot, add water and let it boil for a few minutes, rinse and add fresh water.

1. Finely chop onion, carrot and the bell pepper. Add it to the beans and let it boil. Reduce the temperature to medium, cover the pot slightly and let it cook for about 1 hour. Occasionally check if water level has reduced, add additional water to always keep the same level of liquid in the pot.

After 1 hour add all spices. 

2. Cook for another 1 to 1.5 hours. To check if beans are ready take a few out of the pot and squeeze them between your thumb and index finger. If they are soft and creamy, and the skin comes off they are ready. The soup will look thick and it will smell amazing. Now add tomato paste and let it incorporate well into the soup. 

3. It is time now to make the roux to thicken the soup. Peel and finely chop 3-4 garlic cloves. Using medium setting, heat 2 tablespoons of oil in a small frying pan. Toss the chopped garlic in oil just until fragrant.

Add flour and mix it with a wooden spoon until all crumbs disappear and flour starts changing its colour to a very light brown. 
Now add paprika and again mix well. 

4. Pour the roux into the soup. Give it a nice stir, reduce the heat and cook for another 5 minutes. Taste and add more salt if needed.

Serve warm with a slice of a nice, crusty bread.

Vegan Broccoli Soup

Every Sunday it is a ritual to have dinner at my Dad's. Last weekend Jake and I decided to have them over for the first time, since MKR was such a success! It was a little nerve racking since my Dad is the best cook ever, (and no I am not being bias) he is amazing!

I am going share my broccoli soup recipe that took me less than 10 minutes to whip up.

Broccoli Soup 

Ingredients
2 heads of broccoli 
2 cloves garlic
1-2 tablespoons vegan butter (optional)
Salt & Pepper to taste

Method


1. In a large pot bring water to boil and add 1 teaspoon of salt. Make sure your water is rapidly boiling as we only want to flash boil the broccoli to retain the flavours and colours. 

2. Cut broccoli into florets, use the steam too!

3. Boil broccoli in rapid boiling water, for no longer than 3-4 minutes. You will know its is ready as it will be easy to poke with a fork and is bright green.

4. Place a bowl in the sink to catch the water (we are going to use the water), then drain your broccoli on top. 

5. While everything is still hot, place your broccoli in the blender. Add the saved broccoli water at the half way mark on your blender, add garlic. 

Grab a tea towel and place it on top of the blender lid, with your hand firmly on (this prevents broccoli soup on your roof since its hot). Pulse a few times, then blend on medium till smooth. If you want it thinner add more water.

6. Pop it back in the pot and add vegan butter and heat through. If you have vegan parmesan, drop in about a handful or more and melt.

To season add salt & pepper, garnish with  parsley and vegan parmesan cheese.

Roasted Pumpkin Puree



Roasted Pumpkin Puree

Roasting pumpkin retains and condenses the flavours and natural sweetness as opposed to boiling it. If you are making a sweet pumpkin pie this part can take a little effort but its well worth it.

1. Using a whole pumpkin can be a pain to chop, wrap it with tin foil and bake in the oven at 200C for 1-2hours (once the whole pumpkin is soft enough to chop, cut it up and bake further til soft).

If you are strong cut into pieces and roast those until soft, around 30mins. You can also buy pre-cut pieces at the supermarket.

2. Once the pumpkin it cooked, scoop out the flesh, discard the skin. Make sure you remove all of the skin so that our puree dosen't turn green.

3. Puree using your food processor or blender until crazy smooth. Voila you have some smooth pumpkin puree for pumpkin pie or soup or baby food!
