Buckwheat is considered a superfood as it is energizing and nutritious. It can be served as an alternative to rice or made into porridge or puddings. I have had this buckwheat in my pantry for a while now, and never really had a clue of what to do with it! My random sweet choco craving came over this afternoon, and this is what I came up with: Buckwheat Chocolate Pudding.
I searched endlessly on google for buckwheat pudding recipes, but some were to complicated or had too many ingredients - This how I felt. I am a simple girl when it comes to cooking, and this pudding tastes far from simple. The texture is just right and is so rich and chocolatey!
Buckwheat Chocolate Pudding
Serves 2-4
Ingredients
1 cup of buckwheat
2 cups of water
1 cup of coconut milk or any non dairy milk
1-2 tablespoons of cacao or cocoa powder
2 tablespoons of coconut sugar or any other refined sugar alternative
2 heaped teaspoons of vanilla soy protein powder (optional)
Method
1. Wash and drain buckwheat, and boil with water until tender around 10 -15 minutes.
2. Add the soy milk and the rest of the ingredients, mix well, then leave to cool.
3. Once cool, whizz through a food processor until smooth. If needing more liquid to help blend add more soy milk.
4. You will end up with a nice thick pudding, add more soy milk if you are wanting a thinner consistency.
Serve and enjoy with your favourite toppings!
