Warm Kumara Salad



This gorgeous salad is perfect for a winters night or even summers day. 

The salad dressing is Asian inspired and has nice zing from the garlic and lemon. It's my secret recipe that I use for all my salads even grilled veggies! 

Warm Kumara (sweet potato) Salad

Serves 2-4

Ingredients

2 large kumara (sweet potato)
1 can of chickpeas
1 bag of baby spinach 
A handful of cashews
1/2 red onion thinly sliced

Dressing
2 whole garlic cloves gently crushed 
3 tablespoons of fresh lemon juice 
2 tablespoons olive oil 
tablespoon of tamari or soy sauce
Sea salt and cracked pepper to taste

Garnish (optional)
Black sesame
Sliced almonds 

My signature dressing!


Method 

1. Boil diced kumara in boiling water till cooked, around 5-10 mins. Once cooked, drain and leave to cool.

2. Prepare dressing by peeling whole cloves of garlic, then using the flat side of a large knife gently crush the cloves, you still want them to be in whole pieces. Add all other dressing ingredients with the garlic in a large salad bowl and mix together using a whisk.

3. Once the kumara is warm, add them to the dressing as well as the chickpeas, spinach and cashews.

4. Serve warm, plate up and add black sesame and sliced almonds to garnish.
