Marinated Tempeh

We love tempeh! It's one of our fav meat alternatives. This has now become Jake's signature dish, as he is great at mixing and matching flavours.

This delish marinated tempeh is inspired by the Vegan Zombie's TLT (tempeh, lettuce, tomato) recipe.

Marinated Tempeh

Ingredients
1 block of tempeh, sliced thinly

Broth marinade:
3 cups hot water
1 vege stock cube
3 bay leaves
1 teaspoon smoked paprika
1 tablespoon oil
4 tablespoons smoked barbecue sauce (if you have liquid smoke use about 1 teaspoon of this instead)
3 tablespoons soy sauce
3 tablespoons kecap manis or brown sugar
4 cloves garlic
1 diced onion
4 slices of ginger
Salt, pepper and chilli to taste

Method
1. Mix all broth ingredients in a saucepan, and bring to the boil.

2. Add tempeh, and simmer on medium heat till broth reduces. This will take around 20-30 minutes.

You can eat it now at this stage for a softer texture or fry for a crispier texture, see below.

Tempeh Bacon:
3. Remove from pan and cool. In a little oil, pan fry or grill in the oven till crispy.

Serving suggestions:
Stir fries, burgers, sandwiches, pasta, salads, cooked breakfasts, barbecue and so much more!

Enjoy xx
