When life gives you passion fruit make passion fruit and coconut pudding!
10 fresh passion fruit
1 400ml can organic coconut cream
1/4 cup organic corn flour or arrowroot powder
2-3 tablespoons agave
1. Reserve one passion fruit for topping. Mix all ingredients in a cool saucepan with a whisk. Make sure to get rid of lumps.
2. Heat on medium temp, constantly stirring until mixture comes to a boil and turns to a thick custard. About 10 minutes.
3. Pour in ramekins, top with reserved passion fruit.
4. Leave on bench till steam is gone, then cover and cool in the fride.
