Chocolate Banana Cups!



I am on a coconut oil chocolate rampage! I had another chocolatey craving tonight, but I didn't want to make my chocolate peanut butter cups. So I looked over at my bananas and here we have it: Chocolate Banana Cups! 

Ingredients

2 tablespoons virgin coconut oil, melted
1 tablespoon cacao power or cocoa powder
1 tablespoon smooth peanut butter
1 tablespoon agave or organic maple syrup or honey (not vegan)
1/2 teaspoon pure vanilla extract

1 large banana cut into 12 pieces

extra peanut butter for filling (optional)
chopped nuts for garnish (optional)


Method

1. Chocolate: Line a mini cupcake pan with 12 mini cupcake cases (if you don't have a mini pan, you can use a regular sized 6 hole cupcake pan).  Or if you don't have a cupcake pan, don't use one, just use the cases :)

2. Melt coconut oil in the microwave for 30-60 secs until clear. Add cocoa, peanut butter, agave and vanilla to coconut oil and mix well. 

3. Assembly: Evenly put 1 teaspoon of chocolate on the bottom of each case. Add one piece of sliced banana in each case and add a tiny bit of peanut butter to the tops of bananas (optional). 

4. Push the banana down so that the chocolate underneath reaches the sides. Now evenly add the rest of the chocolate to the tops, then sprinkle with you favourite nuts, I used cashews.

5. Freeze for 20-30mins, then eat! The banana should still be soft and the chocolate nice and hard. 

These super easy treats are so speedy to whip up just in time for dessert or a quick snack. My best invention yet!
